Roasted Sheet Pan Gnocchi

Warm and filling, this beautiful melange of vegetables, gnocchi, and feta is roasted in a blend of aromatic spices to create a delicious meal. The vegetables add not only vitamins and minerals, but also a multitude of antioxidants that protect the heart and brain, boost the immune system, and neutralize damaging free radicals.

Ingredients

  • 1 large red onion
  • 6 cloves garlic
  • 1 medium head broccoli
  • 2 bell peppers (any red, green, yellow, or orange)
  • 1 pint grape tomatoes
  • 1 lb frozen cauliflower gnocchi
  • 8 oz feta cheese
  • 2 Tbsp extra virgin olive oil
  • 1 ½ tsp oregano
  • 1 ½ tsp thyme
  • ½ tsp cumin
  • ½ tsp coriander 
  • ¼ tsp red pepper flakes
  • ½ tsp sea salt
  • ½ tsp black pepper

Steps

Preheat the oven to 375 ℉. Cover a large rimmed baking sheet with unbleached parchment paper. Peel the onion and trim the ends. Cut in half and slice from end to end in approximately ½ inch slices and place on the lined baking sheet

Peel the garlic. Slice the cloves into two or three slices. Add to the onions on the baking sheet.

Wash the broccoli, peppers, and tomatoes and drain well. Cut the broccoli into medium florets of equal size. Cut any tender stems into 1 inch pieces. Reserve the larger stems for another use. Add to the baking sheet.

Remove the stems, seeds, and inner membranes from the bell peppers. Cut into ¾ inch strips then cut each strip in half. Add to the baking sheet along with the tomatoes.

Add the frozen gnocchi to the sheet pan. Drizzle the olive oil over the baking sheet. Stir to distribute the oil over all the vegetables and gnocchi.

Make the spice blend by adding the spices and salt to a small bowl and stirring well to blend. Sprinkle the spice blend over the vegetables and toss to distribute the spices. Arrange the gnocchi and vegetables in a single layer on the pan. Roast for 20 minutes.

While the gnocchi is cooking, cut the feta into ½ cubes. After the gnocchi has cooked for 20 minutes, sprinkle the feta over the pan. Return the pan back to the oven and roast for an additional 15 minutes.

Serve warm with some crusty bread or a salad. Gluten free shelf stable gnocchi may be used in place of the frozen cauliflower gnocchi. Goat cheese can be substituted for the feta but increase the sea salt to 1 tsp.
