Gluten Free Dairy Free Mashed Potatoes

Mashed potatoes are a hearty, simple accompaniment for many meals. This version includes steamed potatoes with the skins to preserve a bit more nutrients. It also includes oil instead of butter and dairy free milk.

Ingredients

  • 6 medium yellow or russet potatoes
  • 3 Tbsp extra virgin olive oil or coconut oil
  • 2 Tbsp coconut, soy, or oat milk
  • 1 tsp sea salt
  • ½ tsp ground black pepper

Steps

Scrub the potatoes and cut into 1 inch chunks leaving the skins on. Place in a steamer basket and cook for about 10 minutes or until tender.

 Put the potatoes in a large bowl or drain the pot used for steaming and pour in the potatoes. Mash with a potato masher or fork.

Add the oil and stir well until the oil is distributed. If using coconut oil, stir until is is melted and incorporated.

 Add the coconut milk, salt, and pepper and mix well. Depending on the starchiness of the potatoes, more milk and or oil may be desired for a creamier texture.  Serve warm.
