Onion and Herb Pizza

This gluten free vegan pizza combines sweet and savory components to create a delicious pie. You will be pleasantly surprised. The onions, garlic, and spices bring a range of phytonutrients to the dish including quercetin and allicin, two compounds with both anti-inflammatory and antioxidant properties. The pears not only add a touch of sweetness, but also additional vitamins and fiber. Serve the dish with a side salad as an accompaniment.

Ingredients

  • 3 T extra virgin olive oil
  • 1 large onion
  • 1 gluten free/dairy free pizza crust
  • 3 cloves garlic
  • ¼ tsp sea salt
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp ground marjoram
  • ½ tsp black pepper
  • ½ cup balsamic vinegar
  • 1 ripe pear

Preheat the oven to 450 ℉.  Slice the onion into very thin rings.  Heat 2 tablespoons of olive oil in a large skillet on medium heat. Add the onion and cook for about 10 minutes until lightly brown and translucent, adjusting the heat so the onion doesn’t burn. Remove from the heat and let the onion cool.

Heat the balsamic vinegar in a small pot on medium heat until it almost boils. Reduce the heat to low and let it simmer while the pizza is cooking or until it has reduced by about half.  Remove from the heat and set aside.

Pat the pizza crust onto a pizza pan or cookie sheet lined with parchment paper or a pizza stone dusted with coarse cornmeal. Take your time patting the crust into place and pushing it to cover the pan.  Drizzle the remaining tablespoon olive oil over the entire crust.

Spread the onion rings evenly over the crust.  Press the garlic and spread over the pizza. Sprinkle the salt, oregano, basil, marjoram, and black pepper over the crust. Add a little more of the spices if necessary to distribute evenly.  Bake the pizza for 15-20 minutes or until the crust is crisp and light brown on the edges.

While the pizza is cooking, slice the pears very thinly.  Remove the pizza from the oven and cut into slices. To serve, top each slice with a few pear slices and drizzle with the balsamic reduction.

This pizza is great as a meal but would also make a perfect appetizer if cut into thin slices or bite-size pieces.
