These flavorful chickpeas are so good, you will want to put them on everything. The lime, garlic, and salt compliment the mellow creamy chickpeas. They are especially good in Vegan Quinoa Bowls.

Ingredients
- 3 cups cooked chickpeas (2 15-oz cans)
- 1-2 fresh limes
- 2 cloves garlic pressed or minced
- ½ tsp sea salt
- ¼ cup chopped fresh cilantro
- 2 Tbsp extra virgin olive oil

Zest the limes and set aside. Juice the limes and set aside.

In a large bowl, mix the chickpeas, 1 tablespoon of lime juice, 2 teaspoons of lime zest, the garlic, the cilantro, the sea salt and olive oil. Let the mixture sit for a few minutes to absorb the lime juice. Taste and add more lime juice and sea salt if desired.
