
This is a perfect vitamin-packed snack, breakfast, or meal accompaniment for picky eaters or when you’re short on time. This smoothie contains all of the B vitamins except for B-12, plus a host of other vitamins, minerals, and fiber. Kale supplies a healthy dose of nearly all of the B vitamins. Avocados also contain multiple B vitamins and just one half of this fruit packs a whopping 21% of the RDA of folate. Bananas contain a fair amount of B1 and B3. Plus a medium banana supplies 25% of the RDA for B6. While oranges contain B1, B2, B3, B5, B6 and B9 in smaller amounts, they also add a good amount of vitamin C, a staple for good health. I would encourage you to add the optional spirulina. Not only does it add a high dose of vitamins B1, B2, and B3, but it also enhances the color with its blue-green hue.
Ingredients:
- 2 to 3 large dark leafy greens (kale, spinach, swiss chard, etc)
- ½ ripe avocado
- ½ to 1 banana
- 1 small orange peeled and seeded
- ½ cup water or coconut water
- 1 teaspoon spirulina (optional – for an added punch)
- ½ cup frozen wild blueberries (optional)
- ½ cup ice
Directions:
Pop all the ingredients except the ice in a blender and blend on low for a few seconds then increase to high speed until fully blended. Add the ice and blend at high speed. Add more water or coconut water if the smoothie is too thick. Pour into a large glass and enjoy.
Tip – freeze peeled and sliced bananas for smoothies. Using frozen bananas will decrease the amount of ice needed and make a creamier smoothie.
