Basic Balsamic Vinaigrette

This simple dressing can be whipped up in minutes and is a fantastic alternative to the store-bought dressings that typically contain canola or other seed oils.

Ingredients

  • ⅓ cup balsamic vinegar (organic and preservative free)
  • 1 clove garlic minced or pressed
  • ½ tsp dried oregano
  • ½ tsp dried thyme
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ⅓ – ½ cup extra virgin olive oil
  • 2 T water (optional)

Steps

In a small bowl or a jar with a tight fitting lid, combine the vinegar, garlic, oregano, thyme, salt, and pepper. Stir well to thoroughly combine.

Slowly add the olive oil, stirring continuously. Stir the dressing vigorously to emulsify the mixture.

Add the water if desired and stir vigorously again to emulsify. If using a jar, shake the jar to emulsify the dressing.

This dressing is best if made in advance to bring out the herb flavors.
